
Heart Song Farm produces a variety of cheeses, both fresh and aged, from the healthiest milk possible in our USDA licensed, Grade A dairy and cheese facility. All of our products are truly "farmstead cheeses" - we raise our own goats and craft products exclusively from their milk.
It is our goal to provide continuity of quality. While we remain true to traditional cheese formulas, we find that goat cheese is an ever-evolving product. There are subtle changes throughout the milking season, based on pasture growth, weather and individual lactations. Crafting fine cheese is a careful blend of science and art.
Fresh Chevre - Goat cheeses that everyone will love·very mild, creamy, and sweet. Available in 5 oz, 8 oz, and 16 oz (in cases of 12); or 2 lb, and 4 lb tubs. (Shelf life of 2-3 weeks)
Seasoned Chevre - Dilly Onion, Tomato Basil, Chipotle Chili & Garlic, French Onion, Chive, Boursin, Tomato Jalapeno, Roasted Garlic, and Pesto. Spread on bagels, sprinkled on salads, dappled on pizza·the uses are endless.
Fresh Buttons - Traditional fresh goat cheese, lightly salted, with a sweet, mild, milky flavor. Excellent served at room temperature with crusty bread or a salad and tomatoes. Vacuum packed and sold by the dozen in 3 oz size. (Shelf life of 4 months.)
Gardian - Creamy, mild, chevre button, sprinkled with fresh ground pepper, herbes de Provence, topped with a bay leaf. (3 oz size)
Gardian Au Poirve- Creamy, mild, chevre button, lightly peppered, topped with rosemary sprigs. (3 oz size)
Bella Gardian - Creamy, mild, chevre button, topped with basil pesto and topped with a slice of roasted red pepper. (3 oz size)
Goat Milk Camembert - 4 inch round, mild, lightly jacketed in white mold, wrapped in a breathable French cheese paper. Shipped "young" at two weeks of age. Can be aged to full flavor at four weeks of age, when the heart will be firm and white, surrounded by cream.
Valençay - 5 oz truncated pyramid, named by Napoleon, after the castle in Valençay, France. Covered with salted vegatable ash, and a light coating of white mold. Creamy, firm texture, eaten with or without the rind. Wrapped in breathable white cheese paper.
Chanson du Coeur, Blanc - 16 to 18 oz round, 4 inches across, 4 inches tall. Lightly mold ripened, aged to a perfect gentle creaminess around the edges, firm, bright white paste in the center.
Chanson du Coeur, Noir - 16 to 18 oz round, 4 inches across, 4 inches tall. Lightly ashed and mold ripened, aged to a perfect gentle creaminess around the edges, firm, bright white paste in the center.
Coeur Brise - 16 to 18 oz round, 4 inches across, 4 inches tall. Lightly ashed exterior with a fine line of ash through the center. Gently mold ripened.
